Healthy Apricot & Lemon Balls

 

 

 

 

 

Ingredients:

– 250g dried apricots

-1/2 cup of dessicated coconut

– 4 tsp coconut oil

– 1 lemon

– 1 cup almond meal

 

Method:

1. Food processs dried apricots so they are in very small pieces.

2. Place processed apricots in a bowl and add coconut, coconut oi and almond meal.

3. Finely grate lemon zest into the bowl of the whole lemon and then chop it in half using only half the lemon, sqeeze the juice in.

4. Mix all the ingredients together using your fingers until well combined. Make sure all the coconut oil has been mixed through thoroughly.

5. Make mixture into small and coat with any coconut that you may have left over.

 

These are very yummy and are a great healthy snack and great for kids!
